From our skinny table to yours...

Ok ladies, are you ready for our new obsession?  We took the classic combination of peas and mint to a whole new delicious level!  All the credit here goes to our lovely mom!  What a fabulous idea! Introducing Sweet Pea and Mint Hummus, our new go-to snack!  This hummus is bean free and made simply from peas :)



We love to make a nice BIG batch of hummus every week so we have healthy snacks on hand and ready to be eaten when hunger strikes.  Making your own hummus assures you are eating clean, whole ingredients.  This particular batch is super simple to make as well!  Simply toss frozen peas, parmesan cheese, garlic, lime juice, olive oil and fresh mint leaves in the food processor or blender and blend away! 
 
If you want to put a spin on our scrumptious pea hummus, simply swap out the fresh herbs!  We made a batch of Sweet Pea and Cilantro Hummus and are in love with that variation too :)


MMM this is so delicious!  Chop up tons of fresh veggies and pack them up in your fridge to dip alongside your veggie packed hummus!  Talk about a healthy snack ;)

Serves: 8
Calories: 152
Fat: 9.5 grams
Carbs: 12.4 grams
Dietary fiber: 4.3 grams
Protein: 5.8 grams

Ingredients
24 ounce bag of frozen peas
1/3 cup olive oil
2 tbsp. parmesan cheese
2 garlic clove
Juice from 1.5 limes
1 small handful mint leaves

Let's get cooking!
1.  Remove peas from freezer.  Let sit out for ten minutes to defrost. 
2.  Add peas, parmesan, garlic, mint, juice from 1.5 limes and olive oil to food processor/blender and blend until smooth.
3.  Serve alongside chopped veggies

Serves 8 healthy portions!  Enjoy :)
