Cherry & Dark Chocolate Morning Muffins

From our skinny table to yours...

It's gorgeous out today and it's starting to get warm, you know what that means... tank tops, shorts, flip flops and BIKINI'S!  It's definitely time to buckle down and get healthy unless you want to hide behind baggy t-shirts and a one piece this year... we certainly don't!  So join us and let's all flaunt our stuff this summer ;)

Today we are prepping our healthy breakfast for the week!  It's so important to start your day off right, it gives you the energy you need to keep going and let's face it if you start off healthy you're more inclined to continue on the right path throughout the day!  Today we are turning one of our favorite desserts into a healthy and delicious breakfast.   Here is our spin on the chocolate covered cherry, our Cherry & Dark Chocolate Morning Muffins.  What a fun way to start the day!


YUM... look how delicious they look, and we promise they taste just as good!  They are super simple to make as well.  One of our favorite skinny substitutions when baking is to sub out the sugar for applesauce!  We are simply going to pour our wet ingredients consisting of applesauce, cherry Greek yogurt, light dairy free coconut milk (or skim-milk), egg whites, and vanilla extract over our dry ingredients.  The dry ingredients consist of antioxidant rich dark chocolate, dried cherries, heart healthy oatmeal, and unsweetened cocoa powder and flax seed!  We love hiding flax seed in our muffins as it is rich in omega 3 fatty acids, fiber and lignans (which they say can help balance female hormones and may even help prevent breast cancer)! 



We don't always use the muffin liners, but we saw these pink and zebra cupcake liners and could not resist! :)  The clincher to this awesome and adorable breakfast, these little muffins have only 106 calories!  Talk about a healthy and fabulous way to start to the day!  So join us and prep your breakfast out this week so we can start each day off with a bang together!

Nutrition Facts Per Serving
Serves: 12
Serving size: 1 muffin
Calories: 106
Fat: 1.8 grams
Carbs: 14.4 grams
Dietary fiber: 2 grams
Protein: 4.6 grams

Ingredients
2 cups oatmeal
1 cup applesauce
1 dark cherry greek yogurt
1 cup light dairy free coconut milk (or skim milk)
1/3 cup dried cherries
2 tbsp dark chocolate chips
1 tsp vanilla extract
1 tsp dark cocoa powder
1 tsp baking powder
1 tbsp flax seed (you can find this in the organic aisle)
1 tbsp egg white

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  First mix all dry ingredients together into bowl.  Mix oatmeal, cherries, chocolate chips, baking powder, cocoa powder and flax seed.  Mix well and set aside
3.  Moving on to the wet ingredients.  Whisk together the yogurt, applesauce, milk and vanilla extract.
4.  Either spray muffin tin with non-stick spray or use muffin liners.  Add approx 1 tbsp of wet ingredients to the bottom of each tin.  Then fill each tin with the dry oatmeal mixture
5.  Once the oatmeal is portioned out, pour the remaining wet ingredients over top all muffins.  Stir each individual muffin to make sure all oats are saturated
6.  Bake muffins for approx 30 minutes or until knife is pierced through the center and comes out clean

Serves 12 muffins!  Enjoy :)
