Asparagus and Roasted Red Pepper Pizza

From our skinny table to yours...
It's that time of the week again... 'Cheat night' ;) So we ask the men what they wanted and pizza was the response!  Who doesn't love pizza?  We sure do, but were always the girls who patted down the greasy slice with ten napkins at the restaurant!  So we went to work in the kitchen to come up with something healthy that tasted great and we definately did it!  With our healthy homeade method we can all truely have this any day of the week and not feel bad about it!  We started with whole wheat dough, eliminated the pizza sauce (as its packed with sodium) and simply used diced tomatoes.  We then loaded it up with veggies, in this particular pie we choose roasted red peppers, carmelized onions, spinach and fresh asparagus!  If you have a big meat eater in your family adding a little shredded chicken (boil it to elimate extra calories & fat) is the perfect addition!  Just remember to be light on the cheese... we used fresh mozarella, it's the best!!  Hope you enjoy this pie and can be an addition to your weekly menu rather than dialing out for a greasy pie :)


Asparagus Pizza
Ingredients:
Whole wheat dough
Olive oil
Garlic (5-6 cloves)
1 15 oz can diced tomatoes (no salt added)
1 handful fresh basil
Oregano
Asparagus (10-15 stalks)
2 cups fresh spinach
1 red pepper
1 medium yellow onion
1 large mozarella cheese ball
6 ounces of chicken breast

Let's get cooking!
1. If you are choosing to put chicken on the pizza, cut fat off chicken breast and place in boiling water. Cook until white throughout then shred & chop up
2. Cook dough according to package, (some require you to pre-cook for 10 minutes or so) after dough is pre-cooked, add a light layer of olive oil, 2 cloves of minced garlic, fresh basil & oregano
3. Add can of diced tomatoes, half of chopped fresh mozarella cheese & carmelized onions (to carmelize onions, slice up in thin strips and saute in pan with olive oil and one clove garlic until onions turn a nice golden brown color, this will take approx ten minutes and make your house smell great!)
4. Add roasted red pepper(you can buy a jar or roast yourself...to roast simply place whole pepper in oven @ 400 for 20 minutes, rotate pepper halfway throughout. Remove from oven when nice and soft, peel off skin and you have yourself a roasted red pepper) Cut pepper in thin strips and spread over entire pie
5. If you opted to go with chicken, add shredded chicken at this point
6. Saute up spinach and asparagus with the remaining garlic and arrange on pizza. Top with the remaining cheese and fresh basil.  Cook for an additional 8-10 minutes at 350 until cheese is melted.
