Garlic Veggies & Quinoa

From our skinny table to yours...
Here's a perfect 'use what you have on hand' lunch for any day of the week! We love grilled veggies and there is nothing healthier than a bowl full of whatever greens you have in your fridge!  We chose to saute up a combination of zucchini, corn, carrots, asparagus, peppers, onions & brussel sprouts.  We thought quinoa would compliment this perfectly and pack in even more nutrition, so we cooked up some protien-packed quinoa and topped it with the veggies we had on hand.

Garlic Veggies & Quinoa
Ingredients: no specific list here, just use a little of this and a little of that!
Olive oil
Garlic
Lemon
Hot sauce
Cilantro
1 small yellow onion
red pepper
brussel sprouts, cut into halves
asparagus stalks
zucchini
carrots
frozen corn
broccoli
cherry tomatoes
1/4 sweet potato
avocado

Let's get cooking!
1. Cook quinoa according to package.  We added hot sauce and cilantro directly into the water as the quinoa was boiling.  Feel free to spice up the quinoa according to your own taste
2. As quinoa is cooking, chop up all veggies & sweet potato into small chunks.  Mince garlic finely
3. Saute the sliced onions, sweet potato & carrots in pan with olive oil & garlic as they take longer to cook them the rest of the remaining ingredients
4. After sweet potatoes begin to soften, add in the remaining ingredients (except avocado) and juice from one lemon and continue to cook to your liking (about 5 minutes worked perfectly for us)
5. Place cooked quinoa into bowl, pile on the grilled veggie mixure and top with fresh avocado chucks!

It doesn't get any healthier than this... so eat up and enjoy!!
