Roasted Chicken, Apples & Cranberries

From our skinny table to yours...
It's the week of Thanksgiving and since there is much to do to prepare for the big day, here's a quick one dish supper perfect for a night like tonight!   If you're anything like us, the days prior to the holidays are quite hectic so we didn't have the time, nor the desire to make anything crazy.  This dish takes ten minutes to prepare before popping it in the oven and will make the house smell delicious as it's roasting in the oven, the perfect precursor to Turkey Day!  Simply chop up chicken, sweet potatoes, carrots, apples, onions, and garlic and toss it in one dish.  Season up the meal with tyme, rosemary, olive oil and fresh cranberries and you have yourself an easy, nutritious meal with all the delicious fall flavors!

Ingredients:
Olive oil
Garlic
6-8 ounces chicken breast
1 sweet potato
3 large carrots
1 large apple
1 large yellow onion
garlic (2-4) cloves
3 sprigs thyme
2 sprigs rosemary
1/4 cup dried cranberries

Let's get cooking!
1. Preheat oven to 400
2. Chop up sweet potato, carrots, apple, and chicken into chunks.  Slice up onion & mince the garlic. 
3. Toss all ingredients into baking dish, coat with olive oil and minced garlic.  Add thyme leaves and rosemary then roast in oven for approx one hour.  Be sure to mix around every 20 minutes to prevent burning.
4. When fully cooked top with fresh cranberries and serve!
