Mini Eggplant Pizza

From our skinny table to yours...

Today we are enjoying eggplant in our favorite form... pizza style!  Who doesn't love a veggie turned pizza?  This is such a great way to satisfy the pizza craving without having to feel the guilt from all the consumed grease and what not!  Not only will this satisfy you but to all you ladies with kiddies out there, talk about a great way to disguise a veggie ;)

Ok, so not only is this a great snack for 100 calories, but talk about EASY!  Simply slice up your eggplant, and dip into an egg white wash and cover with panko (for the perfect crunch)!  Bake these in the oven until crispy and then top these bites with diced tomatoes and one tablespoon of reduced fat mozzarella cheese.  Pop these back in the oven until the cheese melts to a nice bubbly brown and you'll be settling that pizza craving in no time at all ;)

Serving size: 2 eggplant pizzas
Serves: 10
Calories: 104
Fat: 2.4 grams
Carbs: 14.1 grams
Dietary fiber: 3.8 grams
Protein: 6.8 grams


1 medium eggplant - makes 10 slices
1/2 cup diced tomatoes (we used a can of garlic and basil tomatoes)
1/2 cup panko
4 garlic cloves minced
1 handful fresh basil
1 egg white
10 tbsp reduced fat mozzarella cheese
non-stick olive oil spray

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  Slice up eggplant into ten thin slices.  We left skin on because the skin contains many nutrients, but peel the skin if preferred.
3.  Make egg wash with one egg white and 1/2 cup water.  Beat the mixture.  Dip eggplant slices first into egg wash then cover with panko.  Spray baking sheet with non-stick spray then arrange slices onto pan.  Cook for ten minutes, flipping halfway through
4.  Add sauce, minced garlic and one tbsp mozzarella cheese to each slice.  Bake for an additional 5 minutes to melt cheese.  Top with fresh basil and enjoy!
