Spicy Black Bean Hummus

From our skinny table to yours...

Holy yum!  You might be starting to realize by now that we LOVE veggies and hummus.  It's hands down are favorite go-to snack!  We love creating new variations, our latest creation being our Spicy Black Bean Hummus.  Don't get us wrong we are still completely hooked on our Sweet Pea & Mint Hummus, we just love to experiment in the kitchen ;)

We love to make a nice BIG batch of hummus every week so we have healthy go-to snacks ready when hunger strikes.  Making your own hummus ensures you are eating clean, whole ingredients and organic too should you choose!  Hummus is super easy to whip together.  We made this batch simply from organic black beans, olive oil, cilantro, cumin, jalapeno (for a little kick), garlic and freshly squeezed lime juice!  

We topped our hummus with some roasted organic corn for a little crunch and then went to town dipping.  Chop up your favorite veggies and enjoy!

Carbs: 8.3 grams
Dietary fiber: 2.5 grams
Protein: 2.8 grams

1 can organic black beans
2 cloves garlic chopped
1 jalapeno seeded and chopped
1 tbsp cumin
3 tbsp olive oil
1 lime
handful fresh cilantro
2 tbsp frozen corn for topping
non-stick spray

Let's get blending!
1.  Rinse black beans to remove excess sodium.  Add beans, garlic, jalapeno, cumin, olive oil, cilantro and the juice of one lime to food processor/blender and blend until smooth.  
2.  Spray non-stick spray in skillet.  Add frozen corn to pan and saute for 2-3 minutes until browned.
3.  Top hummus with roasted corn.
4.  Serves alongside chopped veggies.  

Serves 8 healthy portions!  Enjoy :)
