Baked Balsamic Chicken Milanese

From our skinny table to yours ...

Here's a fancy spin on a more traditional salad with chicken & our version of the always popular Italian dish Chicken Milanese!

Start with crispy chicken (thanks to panko & the broil setting NOT frying), add in fresh mozzarella, roasted red peppers, tomatoes, caramelized onions and top with our homemade sweet balsamic dressing for a delicious and super satisfying 'salad.'

We always like to make our own dressing! It's so quick, more flavorful than bottled dressings, so much healthier and makes the perfect topping for our lightened up crispy chicken Milanese.

Ingredients

1 pound of thin sliced chicken breast
2 eggs (use one whole egg & one egg white)
Skim milk
1 cup of Panko bread crumbs
Italian seasoning
1 bag of mixed greens
1 bag baby spinach
1 pint grape tomatoes
2 red peppers roasted (feel free to use jarred!)
1 small white onion
1 tsp butter
1 ball of fresh mozzarella

Dressing
1/4 cup of balsamic vinegar
1/4 cup of extra virgin olive oil
Splash of lemon juice
Splash of soy sauce
1/2 tsp of Dijon mustard
1/2 tsp of brown sugar
Onion powder
Garlic powder
Salt & pepper

Lets get cooking!
1. Preheat oven to 400. Beat together one egg, one egg white and a splash of milk. In a separate bowl, add panko and mix in Italian seasoning.
2. Pound out chicken into thin slices. Coat in egg mixture, then bread crumbs and place on baking sheet. Bake for 10 minutes then broil each side for 1 minute on high.
3. While chicken is baking, whisk together olive oil, vinegar and Dijon mustard. Add in the splash of soy sauce, lemon juice and stir to combine. Season with brown sugar, onion powder, garlic powder, salt and pepper.
4. Cut onion into thin slices to caramelize. Add butter to a pan on medium high heat and sauté onions until brown stirring occasionally. Once brown, splash in a touch of balsamic vinegar.
5. Chop tomatoes, roasted red peppers and fresh mozzarella.
6. Plate up chicken into 4 servings and drizzle dressing.
7. Top each portion with half mixed greens and half baby spinach.
8. Top each salad with tomatoes, roasted red peppers, caramelized onions and fresh mozzarella.
9. Drizzle with the sweet balsamic dressing and enjoy!
