Poblano Guacamole

From our skinny table to yours ...

Is there one recipe that you always get asked to bring to parties over and over again?  For us, it is this guacamole recipe.  It has been a staple for us for SO long that we just had to share it for you all to love on too!


Truth be told, we could eat ANY guacamole recipe and like it but this one is seriously, over the top delicious.  This is a simple combination of avocados, grape tomatoes, white onion, cilantro and poblano peppers simply seasoned with himalayan pink sea salt & fresh squeezed lime juice.  The poblano gives it a mild spicy kick that adults & kiddies will both enjoy!  


Serve this up with a couple organic tortilla chips and you are good to go.  We are personally huge fans of organic blue corn chips ... so so good!

Serves 6

Ingredients
2 avocados
1/4 cup diced grape tomatoes
2 tbsp minced white onion
2 tbsp diced poblano pepper
2 tbsp fresh minced cilantro
Juice of half a lime
1/4 tsp pink himalayan sea salt

Let's get cooking!
1. Halve avocados, remove pit & dice.  Add to bowl and season with juice of half a lime & sea salt.
2. Add diced grape tomatoes, diced white onion and diced poblano.
3. Stir in minced fresh cilantro.
4. Refrigerate for 15 minutes to chill (please don't skip this step!  It makes SUCH a difference!)

Makes 4-6 healthy servings!

I've been resisting as much as I could, but when I eventually decided to try it - I surprisingly momentarily fell in love with guacamole. Now I experiment with different cooking methods and I'll probably will try your recipe too.
