Watermelon Basil Balsamic Salad

Happy Memorial Day weekend ALL!  When we're all out BBQing and sipping skinny cocktails poolside, let's make sure to take a moment to remember the real meaning of today.

With that said, this watermelon basil balsamic salad is sure to be something you will love.  And if you're still searching for the perfect dish to bring along today, this is definitely a winner.

This salad is so fresh & sweet and not to mention, so simple to make!  It's simply watermelon, cucumber, tomato, gorgonzola and basil.  We drizzled this with balsamic glaze to finish.

This is perfect as is.  Sweet and refreshing from the watermelon and cucumber perfectly balanced by the creamy, tangy gorgonzola.  If you're feeling fancy & want to turn this into a complete meal, feel free to top with avocado and grilled chicken or shrimp.

2 cups of diced watermelon
1 cucumber chopped
1 pint of grape tomatoes
4 tbsp gorgonzola cheese
2 tbsp fresh chopped basil
2 tbsp balsamic glaze

Let's get cooking!
1. Dice watermelon into cubes, cut cumber into half moons, halve grape tomatoes and all to a bowl.
2. Sprinkle in gorgonzola cheese and freshly chopped basil.  Gently stir to combine.
3. Drizzle with balsamic glaze.
