From our skinny table to yours...

It's finally starting to feel like summer out there!!   BBQ's, bikini's & sun... oh my!  However if you are anything like us now is the time to fight off those ice cream cravings!  Our solution is to always keep a healthy homemade fruity treat in the freezer rather than splurging when the ice cream truck rolls on by ;)  This one is a winner and is made from only 4 ingredients!  Can't beat that :D

 
This is a super healthy and quick snack to keep on hand!  We start off by making our PB stuffing.  We cut the peanut butter calories in half by mixing in half plain Greek yogurt.  To spice things up we add in a drop of extract.  Today we chose orange (YUM), but vanilla and peppermint are equally as delicious.  And we bet a little dark cocoa powder would be nice calorie free addition too ;)!
                 
 
Simply thinly slice a large banana and start stuffing!  We like to freeze these for a few hours before eating and they come out oh so good...

 
These are SO good and there is nothing to feel guilty about now when you pop in the freezer for a late night snack! ;)

Ingredients
1 large banana
1 tbsp. all natural peanut butter
1 tbsp. organic plain Greek yogurt
1 drop extract (orange, vanilla, peppermint)
 
Let's get cooking!
1.  Mix peanut butter, yogurt and extract together. 
2.  Thinly slice large banana.
3.  Stuff 'sandwiches' with peanut butter mixture.
4.  Freeze for at least 3 hours.
