Grilled Lime Chicken with Mango Avocado Salsa

From our skinny table to yours ...

Hellooooo SPRING!!!  This dish is truly what spring on a plate would taste like and OMG is it delicious.  Chicken grilled to perfection topped with fresh, beautiful, bright homemade salsa and drizzled with a fruity cilantro mango sauce.


If you haven't yet tried our mango lime shrimp, it is a must and the inspiration for this meal.  The mango cilantro sauce is SO good we could truly pour it in a glass and drink it ... we might actually have to make a fruity cocktail in the near future so be on the lookout for that ;)


We are also BIG believers that you eat with your eyes first & this meal looks just as beautiful as it tastes.  Not too mention, it is so so easy to make!  And since we both have young babies these days, expect to find more & more quick cooking meals on the blog.

Ingredients
1 pound organic chicken breast (4 small breasts)
1 tsp cumin
2 limes
1/2 cup dry quinoa/brown rice blend
1 avocado
1 cup grape tomatoes
2 mangoes
1 tbsp diced red onion
1 tsp honey
1/4 cup of 100% orange juice
One bunch of cilantro

Let's get cooking!
1.  Add 1 cup of water to a saucepan and bring to a boil.  Add quinoa & rice.  Reduce to a simmer, cover & cook 25 minutes until tender (please double check package directions!).  Stir in 1 tbsp minced cilantro.
2.  Coat chicken breast with juice of 1/2 lime and season with cumin.  
3.  Heat grill pan (or grill!) to medium high heat.  Grill for 5-6 minutes on each side until cooked through.
4. To make salsa, combine diced avocado, 1 mango diced, grape tomatoes diced, minced red onion, a squeeze of fresh lime juice and 2 tbsp minced cilantro.
5.  To make sauce, blend together 1 diced mango, honey, juice of 1/2 a lime, orange juice and 2 tbsp cilantro.
6.  To serve, place a bed of rice, 1 chicken breast sliced and top with a generous portion of salsa & drizzle with mango cilantro sauce.

  1. Oh yes please!! This sounds delicious!! I'm always looking for new chicken recipes. I feel like we get caught up in a rut so much in the summertime with grilling. This mango avocado salsa would be great on it's own even to spice up regular old grilled chicken!! I love it!
