Avocado & Tomato Grilled 'Cheese'

From our skinny table to yours...

This one is for all the avocado lovers out there (like us)!!  We can pretty much eat avocado all day everyday....  and that goes for grilled cheese as well!  Today we are swapping out the cheese for warm ooey gooey avocado and it doesn't get any simpler ladies.  This super healthy lunch takes all of 5 minutes and rests in the hands of 4 ingredients :)

We started by slicing up a ripe avocado and juicy tomato.  We then added the avocado to both sides of whole wheat bread.  Top your avocado (on one side) with 2 slices of tomato and a handful of fresh baby spinach and PRESTO!  Easy enough right?

We popped our avocado sammie on the grill pan in a touch of olive oil.  The avocado melts so nicely it's such an awesome grilled cheese fake-out!  We hope you enjoy this one as much as we did :D

2 slices whole wheat toast
1/4 avocado sliced super thin
2 slices tomato
small handful baby spinach
1/2 tbsp. olive oil

Let's get cooking!
1.  Place avocado slices on both sides of whole wheat toast.
2.  To assemble sandwich top one side of bread with 2 slices tomato and baby spinach then form into a sandwich.
4.  Add olive oil to pan (we used a grill pan) over medium heat and grill both sides of bread for approx. 2 minutes or until golden brown.
