Caprese Quesadilla

From our skinny table to yours...

Are you as caprese obsessed as we are?  Today we are turning our LOVE of caprese and our LOVE of quesadillas into a super quick and healthy lunch.  Today's lunch will come together in under ten minutes and is made from only 5 ingredients!  Can you beat that??

To start off we simply chopped up our grape tomatoes, fresh mozzarella and lots of fresh fragrant basil!  That's where the chopping ends and the stuffing begins!
To assemble simply stuff each quesadilla with your sliced tomato, mozz, and basil.  We then squeezed balsamic glaze over our filling.  Have we mentioned how much we love balsamic glaze? 
Grill these up in olive/coconut oil and you'll be eating this caprese goodness in no time!  Enjoy!

2 whole wheat tortillas
1 cup grape tomatoes thinly sliced
1 ounce/2 tbsp. fresh mozzarella cheese thinly sliced
1 handful basil sliced
2 tsp. balsamic glaze (we buy Bertolli's in the vinegar aisle)
Let's get cooking!
1.  Add 1/2 tsp. oil to skillet over medium heat. 
2.  Lay out tortilla on flat surface.  Add grape tomato slices, mozzarella slices and fresh basil on one side of the tortilla.
3.  Fold over tortilla and add to skillet.  Cook each quesadilla for 2 minutes on each side.
4.  Slice each quesadilla into 3 slices and enjoy!
