Pepper Steak over Farro

From our skinny table to yours...

Ready for a super quick and easy 7 ingredient weeknight meal the whole family will love?  Anything with peppers, onions and steak makes for a very happy hubs over here!  We try and limit our red meat intake, however there is nothing wrong with eating organic, grass fed lean steak every now and then ;)

 
Ok, ready for dinner in under 30?  Start simply by browning your sliced peppers, onions and garlic in olive oil.  Then toss in your steak strips and brown for just under a minute.  Add in 2 cups of organic chicken/beef stock and let simmer on low to combine flavors!  See how easy! 

We served our pepper steak over farro, our new favorite grain!  If you haven't tried this yet, it tastes very similar to brown rice, just a little nuttier and more plump!   Here's the good news, farro is a protein and fiber packed grain which is believed to stimulate your immune system, lower cholesterol and maintain blood sugar!  Why wouldn't you eat this?

Ingredients
12 oz organic, grass fed lean filet mignon steak
2 peppers sliced (we used 1 red, 1 yellow)
2 onions sliced
2 cups organic chicken/beef stock
3 garlic cloves minced
1 tbsp. olive oil
4 servings farro
Salt & Pepper

*buy organic ingredients when you can*
 
Let's get cooking!
1.  Cook farro according to package
2.  Add olive oil to sauté pan over medium heat.  Add peppers, onions and garlic and cook for 5-7 minutes or until browned.
3.  While veggies are browning, slice up steak into thin strips.
4.  Add steak for 30 seconds to just brown the outside and then quickly add in the stock.  Allow to simmer on medium-low for ten minutes to allow flavors to combine.
5.  Season with salt and pepper.
6.  Serve over farro.

Serves 4 healthy portions!  Enjoy!
