Garlic Brussels Sprouts & Leeks

From our skinny table to yours...

How do our hubbies not enjoy brussels sprouts?  As these are one of our absolute favs we just don't get it!  Oh well, they are missing out - not us ;)  If you have yet to try these little cabbage balls, this is a great way to introduce the veggie into your diet.  Doesn't everything taste good with garlic and leeks anyway?


This is a great side dish for any dinner party you're hosting or simply enjoy for lunch (as we did)!  To make simply sauté up halved brussels sprouts in olive oil alongside leeks and garlic.  YUM... as if that wasn't enough we are topping the whole dish with nutty parmesan cheese!


Easy, delicious and nutritious.. our favorite combo!  ENJOY :)

Nutrition Facts Per Serving
Serves: 2
Calories: 88
Fat: 4.5 grams (seems high - it's from healthy olive oil)
Carbs: 10.1 grams
Dietary fiber: 3.6 grams
Protein: 4.3 grams

Ingredients
2 cups halved Brussels sprouts
1/3 cup leek chopped
2 garlic cloves
1 tbsp. parmesan cheese
1/2 tbsp. olive oil
non-stick olive oil spray

Let's get cooking!
1.  Add olive oil to skillet over medium heat.
2.  Add garlic and leeks - sauté for 2-3 minutes until begin to brown.
3.  Add Brussels sprouts and non-stick spray to skillet (reminder - do not spray non-stick spray over stove if you have a gas burner, it will ignite!)
4.  Sauté for 4-5 minutes or until browned and remove from heat.
5.  Top with parmesan cheese

Serves 4!  ENJOY :)

  1. I'm with you girls, brussels are the best! & for those naughty days, a little melted raw cheddar is gooooood for dip! ;)

  2. Is it ridiculous that I don't know what a leak is? Or what they look like? But I love Brussel sprouts so I'm willing to find out.
