Apple & Cranberry Harvest Salad

From our skinny table to yours ...


There's nothing like sitting down to a hearty & healthy salad for dinner!  The key to keeping a salad satisfying (and not reaching for a bag of chips after eating!) is to change up the textures, flavors & ingredients.  Our go-to simple salad rule that can be changed out a hundred different ways ... lean protein, dark leafy greens, fruit & cheese.  And if we're craving croutons, we typically add nuts for crunch instead!


Tonight we are taking advantage of the fresh fall flavors and cooking up our apple & cranberry harvest salad.  We start with a bed of baby organic spinach, layer on crisp apples, crumble on Gorgonzola cheese, top with grilled chicken and sprinkle on dried cranberries for color and delicious flavor.  We finish this off with a drizzle of our homemade balsamic vinaigrette ... delicious!

Makes 4 Servings

Ingredients
1 pound thinly sliced chicken breast
16 oz baby spinach
4 tbsp Gorgonzola cheese
2 apples (we used honeycrisp, YUM!)
4 tbsp dried cranberries
1 tsp extra virgin olive oil
Salt & pepper

Let's Get Cooking!
1. Heat grill pan to medium high heat and add olive oil.  Season chicken with salt and pepper and grill for 4-5 minutes on each side until cooked through.  Remove from pan and thinly slice on an angle.
2. Thinly slice apples.
3. Plate up a bed of spinach, top with 1/4 of your apple slices and 1 tbsp cheese.
4. Add 1/4 of your chicken, 1 tbsp cranberries and finish with 2 tbsp of balsamic vinaigrette.

Makes 4 healthy portions!
