Over Easy Eggs over Avocado & Tomato Hash

From our skinny table to yours...

Breakfast is undoubtedly the most important meal of the day!  It's so important to start your day off on the right foot.  We 100% believe that if you start off healthy you are more likely to remain healthy all day.  We absolutely understand it can be difficult in the morning to wake up extra early to whip up a gourmet breakfast.  This morning we decided to get a little fancy, however we have plenty of quick go-to meals including our Mexi Muffins, egg white muffins, & Oat Muffins.   With that said, let's all right here, right now take a vow to avoid the drive through at all costs!  Are you with us? 


We started off by whipping up a quick and healthy breakfast 'hash'.  Our hash consists of chopped avocado, tomato, and sautéed asparagus.  We piled our hash over a bed of sautéed spinach and then topped the whole dish with an organic over easy egg!

No time for all that?  Skip the hash and place your over easy egg over a slice of both avocado and tomato!  We can all handle that ;)

Ingredients
4 organic eggs
2 cups cherry tomatoes halved
1 avocado chopped
1 cup asparagus chopped
8 cups spinach
1 tbsp. olive oil
non-stick spray
Sea salt & Pepper

Let's get cooking!
1.  Add 1/2 tbsp. olive oil to sauté pan over medium heat.  Add chopped asparagus and sauté 2-3 minutes until slightly browned. 
2.  To make 'hash' add asparagus with chopped tomatoes and asparagus and set aside.  Season with S & P.
3.  Add remaining olive oil to pan and add spinach to pan.  Sauté  for 2-3 minutes or until all spinach is wilted and set aside.
4.  To make over easy eggs - coat sauté pan with non-stick spray over medium heat.  Crack 1-2 eggs at a time in pan.  Let them fall and do not attempt to break yolk.  Allow whites to cook fully (approx. 2 mins).
5.  Flip eggs carefully with spatula.  Allow to cook an additional 10-20 seconds and then remove from heat. 
6.  Add spinach to plate, top with hash and then one over easy egg.

  1. Every morning I wake up at 4:30am in order to eat a good breaky & get to the gym before work.
    Some days it sucks and I don't wanna leave my bed, but once I get moving, I feel much better. I love it. I can't stop.
    It's my lifestyle & I love it. :)
