Crunchy Buffalo Chicken Salad

From our skinny table to yours...

We loved our Crunchy Buffalo Tuna Salad so much we decided to whip up this little delight up with shredded chicken!  Our Crunchy Buffalo Chicken Salad is definitely worth trying.  We are swapping out the mayo for a combination of Frank's buffalo sauce and non-fat plain Greek yogurt.  Can we say YUM!

 
We made a nice big batch of this so we could enjoy this for lunch all week long!  We started off by boiling up a pound of organic chicken breast and then simply shredded the chicken apart.  If you are short on time, feel free to use the breast meat from a rotisserie chicken and you will be eating in no time at all!
 
The crunchiness in the salad comes from chunks of both celery and carrots!  We added in another flavor punch with our favorite herb, cilantro!
 
 
We piled our buffalo chicken salad up over a bed of fresh spinach!  A 100 calorie wheat sandwich bun would also be another great option!

Serves: 6
Calories: 122
Fat: 0.6 grams
Carbs: 7.1 grams
Dietary fiber: 1.9 grams
Protein: 20.4 grams
 
Ingredients
1 pound organic chicken breast
1/2 cup non-fat Greet yogurt
1/2 cup Frank's buffalo sauce
3 celery sticks chopped
3 carrot sticks chopped
1 handful fresh cilantro
Pepper to taste
 
Let's get cooking!
1.  Add chicken breast to pot of boiling water.  Allow to boil for 15-20 minutes or until white throughout.  Take chicken breast out of pot and allow to cool before shredding. 
2.  Shred chicken apart into thin strips.
3.  Whip together equal parts yogurt with buffalo sauce.
4.  Stir buffalo sauce into chicken along with carrots and celery.
5.  Add cilantro.
6.  Season with pepper to taste.
 
Serves 6 healthy portions!  Enjoy :)
