Orange Rosemary Crusted Pork Chops

From our skinny table to yours ...


Chicken is definitely our go-to for healthy eating.  We always have it on hand, it's super quick cooking and takes on the flavors of whatever we cook it with - not to mention high protein, low fat ... talk about a win-win!  Well tonight we are switching things up with the other white meat (pork!) which shares all the same healthy characteristics of our go-to chicken breast. 
 
 
We love to cook with boneless, organic pork chops and they just happen to be one of our hubs favorites :)  Tonight we have a total fake out meal for you!  We are making our pan-fried, breaded orange & rosemary crusted pork chops & yes, we promise they are healthy.  In fact, they come in at just 348 calories per serving!


We start by trimming away any visible fat on our chops.  We dip them in orange juice seasoned with rosemary, salt & pepper then coat them in a crispy, panko finish.  We pan fry these in just 2 tbsp. of extra virgin olive oil (don't worry it's the heart healthy fat!) and splash in a touch of orange juice to glaze.

Ingredients
1 pound boneless thinly sliced pork chops
3 oranges
2 tablespoons dried rosemary
1 tsp garlic powder
1/2 cup Panko
2 tbsp extra virgin olive oil
Salt & pepper
 
Let's Get Cooking!
1. Trim away any visible fat from your pork chops.
2. Combine panko, zest from 2 oranges, 1 tbsp. rosemary and garlic.  Season with salt and pepper.
3. Add juice of 2 1/2 oranges to bowl and season with remaining rosemary.
4. Coat chops in orange juice and coat in crispy panko then set aside.
5. In deep sauté pan, add olive oil and heat to medium high heat.  Add chops and cook for 3-4 minutes on each side until cooked through.
6. Add remaining juice of 1/2 orange to pan and flip chops in juice to glaze.
7. Plate up & enjoy!
