From our skinny table to yours...

One of our favorite skinny tricks is to plan out our meals.  Planning out your weekly menu is key to sticking to a healthy diet.  Join us as we plan out our weekly breakfast!  We always start our days with either oat morning muffins, egg white muffins, a fruit smoothie or our yummy Mexican frittata bake to mix it up.  Of course there our days when we just eat a hard boiled egg, avocado and tomato slice.  Whatever we decide to throw down, its always healthy, clean and energizing ;)  Fast food is NEVER an option!

 
Our Strawberry Banana Oat Morning Muffins are super simple to make and even easier to eat ;)  These muffins are made mostly from fruit, nuts, oatmeal and Greek yogurt! 
 
To make these muffins you will simply pour the wet ingredients consisting of Greek yogurt, skim milk, egg white, apple sauce and orange extract over you dry ingredients.  The dry ingredients consist of only strawberries, bananas, cinnamon and almonds for a boost of extra energy!  Easy and PACKED with NUTRITION!  Our favorite combo ;)

 
These healthy and delicious muffins come in at only 90 calories a pop!  It's so important to start your day off with the right kind of energy to motivate you to continue on throughout the day :)

Serves: 12
Serving size: 1 muffin
Calories: 90
Fat: 2.0 grams
Carbs: 13.7 grams
Dietary fiber: 1.9 grams
Protein: 4.7 grams

Ingredients
1 & 1/2 cup dry oats
1 cup strawberries chopped
1 banana chopped
1/4 cup almonds chopped
1/4 cup applesauce
1 egg white
1 non-fat banana or strawberry Greek Yogurt - we went with banana
1 cup skim milk
1 tbsp. orange extract (or vanilla)
 tbsp. baking powder
1 tbsp. cinnamon
 
Let's get cooking!
1.  Preheat oven to 350 degrees
2.  First mix all dry ingredients together into bowl.  Mix strawberries, bananas, oatmeal, baking powder and cinnamon
3.  Now mix wet ingredients.  Whisk together the yogurt, applesauce, milk, egg white and extract
4.  Spray muffin tin well with non-stick spray to coat or use muffin liners.  
5.  Fill each tin with dry ingredients.
5.  Once the oatmeal is portioned out, pour wet ingredients over top all muffins.  Stir each individual muffin to make sure all oats are saturated
6.  Bake muffins for approx 35-45 minutes or until knife is pierced through the center and comes out clean
