Asparagus & Fresh Corn Lemon Basil Summer Salad

From our skinny table to yours...

Today we are whipping up a light and refreshing summer salad.  The best part about this dish (besides flavor of course) is that it will come together in under ten minutes and is made from only 6 ingredients!  What's not to LOVE about easy, nutritious and flavorful dishes??


One of our favorite summer time veggies has always been corn on the cob.  We simply sauteed up fresh corn with asparagus, garlic, lemon juice and lots of basil.  Chill this in the fridge for a nice and refreshing summer salad!  This would be wonderful side dish to serve up at your next BBQ ;)

Ingredients
1 pound asparagus
3 ears of corn
3 garlic cloves minced
2 lemons
1 handful fresh basil chopped
1 tbsp olive oil
Salt & Pepper

Let's get cooking!
1.  Stand ears of corn up vertically.  Slice corn off of cob.  Repeat with all 3 ears of corn and set aside.
2.  Remove the tough white end at the base of the asparagus.  Chop asparagus into small approx 1' pieces.
3.  Add one tbsp olive oil to saute pan over medium heat.  Add garlic, asparagus, corn, the juice from one lemon and half of the fresh basil to pan.  Cook for approx 3-5 minutes or until tender.  Add salt and pepper to taste.
4.  Remove veggies from heat and squeeze in the juice from remaining lemon.  Chill in fridge for as long as possible.
5.  Garnish with remaining fresh basil

Serves 4 healthy portions!  Enjoy :)

  2. This looks terrific. I need to find a way to get the kids to eat asparagus! If it looks weird, they won't touch it. :D Maybe if I tell them they are green beans?
