Mexican Spiced Turkey Burgers

From our skinny table to yours...

So, we were watching 'Next Food Network Star' (which we are obsessed with because we want our own cooking show) and they were doing a Best Burger Contest.  We clearly pretend we are on the show whenever we watch and we were coming up with the burgers we would've wanted to prepare.  One of our ideas was a Mexican Spiced Turkey Burger stuffed with Mexican Cheese.  We would of course make this healthy because that's what we do ;)  And this is exactly what we did!


We're going to go ahead and say we would have knocked it out of the park with this one!  They were so freaking good and super easy too!  Simply saute up peppers, onions, corn, jalapeno, and garlic up with cumin, chili powder and fresh cilantro.  Then mix this Mexican Spiced veggie combo into your 99% lean ground turkey meat.  We added in a touch of egg white, lime juice and panko bread crumbs for easy patty forming!


We didn't stop here, we stuffed each burger with 1 tbsp of reduced fat Mexican cheese and then topped each burger with freshly sliced tomato and avocado!  YUM :)  Delicious and super healthy, that's our favorite combo.

Ingredients
1 pound 99% lean ground turkey breast
1 red pepper chopped
1 small red onion chopped
1 jalapeno chopped
1/2 cup frozen corn
1 tbsp olive oil
2 tbsp cumin
2 tbsp chili powder
4 garlic cloves minced
1 handful cilantro chopped
1 lime
1 tbsp egg white
1/4 cup panko
6 tbsp reduced fat mexican cheese
2 tomatoes sliced
1 avocado sliced
whole wheat buns - we used 100 calorie buns

Let's get cooking!
1.  Add one tbsp olive oil to saute pan over medium heat
2.  Add red pepper, onion, jalapeno, garlic, frozen corn, 1 tbsp cumin, & 1 tbsp chili powder to saute pan.  Saute until golden brown.  Add juice from one lime & mix to combine flavors
3.  In mixing bowl combine lean ground turkey with the veggie mixture.  Add remaining cumin & chili powder.  Mix in chopped cilantro, panko, & egg white.  
4.  Begin forming 6 patties.  When forming stuff each patty with 1 tbsp Mexican cheese.  
5.  Either grill or use saute pan with non-stick olive oil spray.  Cook on medium high heat for 5-7 minutes each side
6.  Top each wheat roll with one burger patty, one tomato slice & 1/6 of your avocado

Serves 6 healthy portions!
