From our skinny table to yours ...


Fresh tomatoes are one of our favorite summer ingredients and today we're blending up a batch of our tomato gazpacho!  Gazpacho is our go-to summer soup and the perfect refreshing treat as it's served cold.

Our salsa inspired soup is a delicious blend of vine ripe tomatoes, cucumber, green pepper, onion and garlic.  We season it up with fresh cilantro & basil and blend together with lime & tomato juice.


At only 105 calories per serving, this is the perfect light lunch but would make a great dinner served alongside our cilantro & lime shrimp skewers!

Ingredients
6 vine ripe tomatoes
1 cucumber
1 green pepper
1/4 white onion
4 garlic cloves
1 cup cilantro
1 cup basil
1 lime
1 cup tomato juice
1 tbsp extra virgin olive oil
Salt & Pepper
Let's get cooking!
1. Bring water to a boil in a medium pot.  Dip tomatoes in pot for 20-25 seconds until skin cracks.  Remove tomatoes from water and peel skin.
2. In blender, add peeled cucumber, chopped pepper and tomatoes.
3. Add garlic, onion, cilantro and basil.  Squeeze in juice of lime and add tomato juice & olive oil. 
4. Pulse until puréed and season with salt & pepper.
5. Refrigerate at least 30 minutes until chilled.
Makes 4 healthy servings :)
