From our skinny table to yours...

There is nothing like firing up the grill on Sunday!  Today we are putting a fruity twist on the Grilled Chicken Kebab.   It's certainly going to feel like summer with our Strawberry Pesto Grilled Chicken & Pineapple kebabs!  This meal is packed with fresh and delicious flavors and low in both calories and carbs, the perfect combo if you ask us!  With Memorial Day NEXT weekend, there is no time to relax because it's officially bikini season!  Work hard this week ladies :)  We got this!


This pesto is packed with yummy flavors from juicy strawberries, almonds, nutty parmesan cheese, garlic, olive oil and fresh basil!  This pesto was so delicious and there are endless ways you can use this one!  Marinate or stuff any protein, flavor your roasted potatoes, make a pesto pasta salad, or even use this as a spread!   We're taking the kebab route today, which let's us relax a little anyway, because the hubs mans the grill ;)


To complement our strawberry pesto chicken, we added in fresh and juicy pineapple to our kebab sticks!  This combination of flavors was amazing.  Pop these suckers on the grill, or grill pan, and they will be ready in a matter of minutes :)


Serve your kebabs up with some grilled veggies and you have yourself a filling and nutritious meal for under 500 calories ;) Hope you enjoy these fruity and juicy summer kebabs!

Serves: 4
Serving size: 2 kebabs

Ingredients
1 pound lean chicken breast
1 cup chopped strawberries
2 cups chopped pineapple
1/4 cup sliced almonds
1/4 cup parmesan cheese
2 garlic cloves
1 tbsp olive oil
1 handful fresh basil
Salt & pepper to taste

Let's get cooking!
1.  To make pesto add strawberries, garlic, almonds, olive oil, basil and parmesan cheese into food processor or blender and blend until smooth.  Add salt and pepper to taste.
2.  Cut chicken into bite size chunks and coat with 3/4 of pesto.  Marinate for 30 minutes.
3.  Chop pineapple into bite size chunks
4.  Slide chicken and pineapple onto each skewer, alternating ingredients.  We put around 4 pieces of chicken on each kebab
5.  Grill on medium heat for 7-8 minutes flipping halfway through.
6.  Serve up with remaining 1/4 pesto on the side for extra dipping.
