Sesame String Beans with Sun-Dried Tomatoes

From our skinny table to yours ...


We're always looking for new fresh & flavorful recipes to change up the typical vegetable side dish.  It's so much easier to eat healthy when you are excited about what you are eating!  Rather than flavor up our veggies with butter and salt, we love to use no calorie or low calorie fresh garlic, ginger, herbs & spices.  Green beans are one of our go-to veggies and today we're sharing one of our favorite simple side dishes!
We start our sesame string beans with sun-dried tomatoes by sautéing up garlic and ginger in a touch of heart healthy extra virgin olive oil.  Once fragrant, simply add your green beans and season with salt & pepper.  Toss in your sun-dried tomatoes and season with toasted sesame seeds to finish.

We always make extra when making this green bean salad because as delicious as it is served warm, it's even better cold the next day for lunch!  Hope you enjoy this one!

Ingredients
1 pound green beans (we bought washed & trimmed!)
2 tbsp extra virgin olive oil
3 garlic cloves minced
1 tbsp ginger root minced
1/2 cup sundried tomatoes
2 tbsp toasted sesame seeds
Salt & Pepper

Let's Get Cooking!
1. To medium sauté pan add olive oil, garlic and ginger.  Cook on medium heat for 2-3 minutes until fragrant.
2. Add green beans to pan and sauté for 5-6 minutes until tender crisp. 
3. Quarter sun dried tomatoes and toss into pan.  Stir to combine.
4. Season with salt & pepper and sprinkle in toasted sesame seeds to finish.
Makes 4 healthy portions :)
