Sauteed Baby Bok Choy with Scallions & Caramelized Onions

From our skinny table to yours...

Our mom is a FABULOUS cook and taught us all we know in the kitchen!  Tonight we are whipping up one of her favorite side dishes, we swear she lives off of side dishes these days, Sauteed Baby Bok Choy with Scallions & Caramelized Onions!  Yum, this one is so delicious, if you have yet to try Baby Bok Choy now is definitely the time :)


This side dish is packed with flavor and will still come together in under 20 minutes flat!  Simply caramelize your onions in olive oil and a little bit of crushed red pepper for some added zing.  Set your onions aside and brown up your baby bok choy in olive oil with garlic, scallions and low sodium soy sauce.  We love the simplicity and the flavor punch this one packs!


This side dish is only 146 calories per serving and would pair wonderfully with our Asian Chicken Lettuce Wraps or even just a piece of grilled chicken with soy, ginger and garlic!  This dish comes together beautifully!  Our mom puts together quite the masterpiece :)

Ingredients
1 pound baby bok choy sliced in half
1 large yellow onion thinly sliced
5 scallions thinly sliced
5 cloves garlic minced
5 tbsp low sodium soy sauce
1/4 cup olive oil
crushed red pepper to taste
salt and pepper to taste

Let's get cooking!
1.  Saute onions in 1/2 of olive oil until brown and caramelized.  Season with crushed red pepper, black pepper and salt.  Set onions aside
2.  Set pan to medium high heat and add baby bok choy to pan.  Brown each side for 2 minutes.  Add the remaining olive oil, garlic and scallions to the pan.  Stir and saute for an additional 2-3 minutes
3.  Add soy sauce to pan and stir and saute 2 minutes
4.  Reduce heat to low and simmer 3 minutes until boy choy is crisp and tender
5.  Reheat onions.  Place bok choy on platter.  Spread onions over top

Serves 4 healthy portions!  Enjoy :)
