Orange, Lemon & Blueberry Mini Cheesecake Bites

From our skinny table to yours...

Everyone needs a little treat here and there.  We may be healthy eaters, but that does not mean we don't have a sweet tooth.  It just means we eat everything in moderation :)  Today we are making healthy and delicious Orange, Lemon & Blueberry Mini Cheesecake Bites!


These are super easy prepare, the prep takes only ten minutes!  All you have to do is watch them bake :)  We found this awesome cream cheese at the market today (we may be a little behind), which is a Greek Cream Cheese & Greek Yogurt combo right next to the regular cream cheeses!  Simply toss 4 ounces cream cheese, a lemon Greek yogurt, 1 tablespoon of light brown sugar, egg whites, vanilla extract, blueberries and freshly squeezed lemon and orange juice in your blender and blend away until smooth.  We used mini muffins liners which are wonderful for portion control and simply adorable ;)


We portioned out one tablespoon of the mixture into each muffin tin and boy are these cute!  Wanna hear the best news of all?  Each individual dessert has only 21 calories :)  These are a wonderful snack to have on hand.  We suggest keeping them in the freezer and letting them thaw out each time the craving hits, this way you don't eat all 24 at once!

Serves: 24
Serving Size: 1 muffin
Calories: 21
Fat: 0.7 grams
Carbs: 2.6 grams
Protein: 1.7 grams

Ingredients
4 oz Greek Cream Cheese & Greek Yogurt (right in the cream cheese aisle)
1 Lemon Greek Yogurt (we used 100 calorie yogurt)
1 orange
1 lemon
1 tbsp light brown sugar
1 tbsp egg white
1/2 tsp vanilla extract
1/2 cup blueberries

Let's get cooking!
1.  Preheat oven to 350 degrees
2.  Add cream cheese, yogurt, zest from both orange & lemon, juice from both orange & lemon, sugar, egg white, vanilla extract and blueberries to food processor/blender and blend until smooth
3.  Add one tbsp of mixture to individual mini muffin tin liner
4.  Bake for 25-30 minutes or until knife is pierced through the center and comes out clean

Makes 24 individual muffins!  Enjoy :)
