Grilled Chicken Caprese with Avocado & Mango

From our skinny table to yours...

As you might have noticed we love eating our meals Caprese style.  We love tomato and mozzarella and thought we would add avocado and mango to the works, another favorite combo of ours!  Tonight we are firing up the grill pan (or grill, it's a little rainy here) and making a Grilled Chicken Caprese with Avocado & Mango.


We started off by grilling up thinly sliced red onion, tomatoes and chicken in olive oil, balsamic vinegar and garlic.  We then simply assembled our meal caprese style.  We stacked our chicken breast with grilled tomato, grilled red onion, roasted garlic and finally one tablespoon of reduced fat mozzarella cheese.  




We popped these chicken stacks in the oven to melt the cheese to gooey perfection.  We then chopped up a combination of fresh avocado and juicy mango and topped our chicken caprese with the two.  This is such a healthy meal and is loaded with fresh and delicious flavors!  Serve this with a veggie of your choice on the side and you have yourself a fulfilling and nutritious meal low in carbs and under 500 calories.  We choose our favorite, asparagus :)

Serving size: 1 chicken caprese stack with avocado & mango topping

Ingredients
1 pound lean chicken breast thinly sliced 
2 tbsp olive oil
olive oil non-stick spray
1 tbsp balsamic vinegar
4 cloves garlic minced
1/2 red onion thinly sliced 
1 tomato sliced
1 avocado chopped
1 mango chopped 
4 tbsp reduced fat shredded mozzarella cheese
Pinch of dry basil leaves
Pinch of garlic powder
Freshly ground pepper

Let's get cooking!
1.  Preheat oven to 350 degrees
2.  Add one tbsp olive oil to grill pan and grill up onion and tomato slices.  Cook for 4 minutes, then add garlic and flip.  Cook for 4 minutes on opposite side.  Remove from heat
3.  Slice chicken breast into 4 thinly sliced pieces.  Season each side with pepper, garlic powder and dried basil leaves.  Add remaining olive oil to grill pan.  Cook chicken for 4 minutes, flipping halfway through.  Remove from heat (Chicken will finish cooking in the oven)
4.  Stack chicken caprese.  Spray non-stick spray to baking dish.  First lay chicken breasts down.  Add tomato slices to each breast.  Next add red onion and garlic.  Add one tbsp of mozzarella cheese to each piece.  Pop in oven for approx 8 minutes to finish cooking up chicken and to melt the cheese
5.  While chicken is cooking chop up mango and avocado
6.  When chicken is fully cooked top each slice with avocado and mango topping
