Garlic & Basil Pesto Flat Bread

From our skinny table to yours...

Today we are whipping up Garlic and Basil Pesto Flat Bread Pizzas!  Pizza is one of our top ten cravings and we love to turn the typical greasy slice into a healthy and delicious personal size pizza.  Isn't it more fun when you can sit down in front of 4 slices instead of one anyway?  We put a spin on the typical tomato sauce and whipped up a quick and easy garlic and basil pesto.


To make the pesto simply blend together basil, garlic, olive oil, nutty parmesan cheese, almonds, and freshly squeezed lemon juice.  We toasted up whole wheat tortillas and spread on our delicious basil pesto.  We topped each pizza with quartered grape tomatoes and two tablespoons of reduced fat mozzarella cheese!  


We topped off these beauties with freshly sliced basil and then popped them in the oven for just a few minutes to melt the cheese.  The best part about this meal is that the whole thing comes together in under 20 minutes! Healthy, quick and delicious... that's our favorite combination :)


YUM!  This entire pizza comes in at only 266 calories!  This would make for a delicious lunch or a wonderful dinner paired with a small side salad.  You could always add a little meat too, to bump up the protein.  Grilled basil chicken or lemon and garlic shrimp sound like delicious additions to us ;)

Serves: 4
Serving size: 1 pizza
Calories: 266
Fat: 13.5 grams
Carbs: 24.8 grams

Ingredients
4 whole wheat tortillas
2 tbsp extra virgin olive oil
1 tbsp vinegar (red wine, apple cider or anything you have on hand)
1 tbsp almonds
3 garlic cloves
2 tbsp freshly grated parmesan cheese
2 cup cherry tomatoes
8 tbsp reduced fat mozzarella cheese
1 lemon 
1 large handful basil + about 8 leaves for topping
Pepper to taste

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  To make pesto toss large handful basil, olive oil, pesto, garlic, vinegar, parm cheese and the juice from one lemon into blender or food processor and pulse until smooth
3.  Toast tortillas in oven for 2 minutes (flipping halfway through)
4.  Quarter cherry tomatoes and slice leftover basil 
5.  To arrange pizzas, spread one tbsp pesto over each toasted tortilla.  Top with 1/4 of cherry tomatoes, 2 tbsp mozzarella cheese and 1/4 sliced basil over top
6.  Place in oven for 3-5 minutes or just until the cheese is melted

Serves 4 healthy portions!  Enjoy :)

  1. I use flatbread a lot with my munchkins. It's a great way to have rosemary style bread or pizza in a pinch. Sometimes there is no time to wait for dough to rise.
