Spiced Chicken with Orange & Fennel Salsa Lettuce Wraps

From our skinny table to yours...


The warmer months always scream SALSA to us.  We could honestly live on dips and love to incorporate this snack into healthy and easy meals.  Tonight's dinner will come together in under 25 minutes and is full of fresh and delicious flavors!  Orange and fennel are one of our favorite flavor combo's and we thought it would make a wonderful salsa.  Let us just say it was so good we had to stop ourselves from snacking before we ate our entire dinner.  This would also be fabulous salsa to bring to a summer BBQ if you are looking for something a little different.  


Yum, look at those bright colors!  This was super easy to put together.  We used a container of mandarin oranges in 100% juice, an ounce of fresh mozzarella, fennel, grape tomatoes, jalapeno, garlic, fresh cilantro, red onion and orange juice!  Easy and delicious.  We spiced up our chicken with paprika, cumin and cayenne powder.


And now for the best news of all, you can eat two huge lettuce wraps for only 258 calories!  This is definitely  the meal to get you looking good in your bikini ;)

Serves: 4
Serving size: 2 wraps
Calories: 258
Fat: 4.5 grams
Carbs: 19.5 grams
Dietary fiber: 3.4 grams
Protein: 27.6 grams

Ingredients
1 pound lean chicken breast
2 cups mandarin oranges (in 100% juice)
1/2 fennel bulb
1 cup cherry tomatoes
1 jalapeno minced
1/4 red onion minced
2 garlic cloves minced
1 tbsp orange juice
1 handful fresh cilantro
1 ounce fresh mozzarella chopped
1 tbsp cumin
1 tbsp paprika
1 tbsp cayenne
1 tbsp olive oil
Lettuce for wraps (we used Boston lettuce)

Let's get cooking!
1.  To make salsa, quarter cherry tomatoes and thinly slice up fennel into small pieces.  Mix together, oranges, fennel, tomatoes, jalapeno, onion, garlic, chopped cilantro, and fresh mozzarella.  Add orange juice and mix to combine.  Chill in fridge while chicken is cooked
2.  Slice up chicken into thin strips and season with cumin, paprika and cayenne.  Saute chicken over medium heat for approx 8 minutes or until fully cooked.  Chicken should be white throughout
3.  Pile up chicken and salsa into lettuce wrap 

Serves 4 healthy portions!

  3. Hopping over from UBP13. I homeschooled for 10 yrs, but now mine are all grown up. I also like to cook, craft & write.

    I've been trying to decide what to fix for lunch after church today. This looks yummy & all I need to pick up is mandarin oranges. Thanks for the idea.
