Cucumber & Red Onion Simple Salad

From our skinny table to yours ...

Today we're whipping up one of our favorite summer side dishes.  This is so deliciously simple as it comes together in under 5 minutes & is made up of just cucumbers & thinly sliced red onion!  These two fresh ingredients pair perfectly together for a light side dish that would go great served along side our Avocado Topped Turkey Burger or BBQ Pulled Chicken.


When making a simple salad, we always go the extra mile and make our own salad dressing.  Not only is it so much healthier, it tastes SO much better!  Once you start making your own dressing, you'll never go back to bottled.  This one comes together super quick too.  Simply whisk together equal parts of red wine vineger and extra virgin olive oil.  Mix in a touch of honey for sweetness and a dollop of honey mustard for creaminess & season it up with garlic, onion, salt & pepper.

Ingredients
2 cucumbers
1/4 red onion
3 tbsp extra virgin olive oil
3 tbsp red wine vinegar
1/2 tsp honey
1/2 tsp honey mustard
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper

Let's Get Cooking!
1. Peel cucumbers leaving thin strips of skin for color.  Halve and thinly slice.
2. Thinly slice red onion and mix with cucumbers.
3. To make dressing, whisk together olive oil, vinegar, honey & honey mustard.  Season with garlic, onion, salt & pepper.
4. Combine dressing and cucumbers and refrigerate for 10 minutes to let flavors combine. 
5. Serve up & enjoy!

Makes 4 healthy portions :)
