Crab & Broccoli White Flat Bread

From our skinny table to yours...

With leftovers galore from Easter we have had our fare share of ham and needed something light and fun tonight!  We eat super healthy but we certainly don't hold back when it comes to holidays.   That doesn't mean we eat everything in sight, but we like to have a small taste of everything.  We live by our favorite 'everything in moderation' motto ;)

Tonight we are putting a spin on the traditional tomato and mozzarella pizza and making a Crab, Tomato & Broccoli White Flat bread!  The flat bread comes from a 100 calorie whole wheat tortilla, which is one of our favorite tricks when it comes to making pizza!  Everyone gets their own pie, which is wonderful for portion control, and it's just more fun!


Take a look at those fresh, healthy and clean ingredients.   We can certainly feel good about sitting down to dinner tonight!   Another added bonus, these are super simple to make and come together in under 20 minutes flat!  We start off by topping our tortilla with a little garlic oil.  To make the oil simply mince up some garlic and saute the garlic in oil olive to infuse the yummy flavor!  We then topped the tortilla with quartered cherry tomatoes and boiled broccoli.  We flavored up the crab meat with freshly squeezed lemon juice and covered both pizzas with fresh and delicious crab meat!  Fresh crab meat can get a little pricey so we recommend purchasing this when it's on sale :)


Now to our favorite part, the cheese!  We have found that when it comes to our tortilla flat bread's two tablespoons of reduced fat cheese is the perfect amount to keep the calories low and to please our cheesy needs.  We topped this off with fresh basil and had ourselves a beautiful and fresh, healthy meal!


Pop this masterpiece in the oven for 5 minutes and you'll be sitting down to eat in no time :)  Wait, we almost forgot to tell you the best part.... this whole pie has only 216 calories!  Dinner in under 20 minutes and under 250 calories, that makes us two happy girls!

Serves: 2
Serving size: 1 pie
Calories: 216
Fat: 7.3 grams
Carbs: 28.8 grams
Dietary fiber: 5.1 grams
Protein: 15 grams

Ingredients
1/2 cup fresh crab meat
1 cup cherry tomatoes
1 cup chopped broccoli
4 tbsp reduced fat mozzarella cheese
2 tbsp freshly chopped basil
2 100 calorie whole wheat tortilla's
3 garlic cloves minced
1/2 tbsp olive oil

Let's get cooking!
1.  Preheat oven to 400 degress
2.  Toast tortillas in the oven for 2 minutes in preheated oven, 1 minute per side - or until lightly browned
3.  Pour 1/2 tbsp olive oil in pan and add all of minced garlic.  Saute for approx 2 minutes on medium heat to infuse oil with the garlic flavor
4.  Pour 2 cups water into small pot and bring to a boil.  Blanch broccoli by placing broccoli in boiling water for approx 2 minutes to soften.  Chop broccoli into small chunks, removing the stem.  Quarter the cherry tomatoes.  Set veggies aside
5.  Sift through the crab meat to make sure there is no shell and mix in the juice from one lemon
6.  To assemble pizza's - Add half of garlic oil & garlic onto each pizza.  Then top each pizza with half of the veggies.  Top each pie with half of crab meat.  Add two tbsp of reduced fat mozz cheese to each pie.  Evenly distribute basil to the top of each pie
7.  Cook both pies for an additional 5 minutes to melt the cheese and heat through

Serves 2 healthy portions!  Enjoy :)
