Cobb Salad with Avocado Dressing

From our skinny table to yours...

Do you crave the popular Cobb Salad?  We do, but NEVER order this when we're going out.  It's packed with calories from chicken, bacon, eggs, cheese and creamy dressings.  It's definitely not the salad to order if you are trying to be healthy.  So why not make our healthy version at home?  Cravings will be settled and calories will be in check with this nutritious and delicious salad!


Our version is packed with delicious flavors from egg whites, turkey bacon, roasted corn, cucumbers, scallions, grape tomatoes and spicy jalapeno! The spicy jalapeno is the perfect accompaniment to our delicious creamy avocado dressing.  The dressing is super simple to make as we simply blend avocado, olive oil, vinegar, lime juice, garlic and a splash of water to lighten this up.  MMM, a little cilantro would be delicious in here too if you are cilantro lovers like us!


Now that's a pretty salad!  Our entire delicious dish comes together at only 261 calories INCLUDING the dressing!  Hope you enjoy this one :)

Ingredients Salad
8 slices turkey bacon
8 hard boiled eggs (will discard all yolks)
2 cucumber chopped
2 jalapeno sliced
1 pint cherry tomatoes
1 cup corn - corn on the cob or frozen
1 bunch scallions sliced
8 cups spring mix

Ingredients Avocado Dressing
1 avocado
1 lime
1 tbsp extra virgin olive oil
1 tbsp vinegar (rice wine, apple cider, red wine all work fine!)
1 tbsp water
1 garlic clove
salt & pepper to taste

Let's get cooking!
1.  To make dressing, toss avocado, juice from one lime, water, vinegar, olive oil and garlic into food processor, (or blender) and blend until smooth.  Salt and Pepper to taste.  Set aside in fridge to chill
2.  Heat saute pan to medium high heat, spray with non-stick cooking spray and roast corn for approx 2 minutes, or until they turn brown and remove from heat
3.  Using same pan, spray again with non-stick spray.  Add slices of turkey bacon.  Cook for approx 5 minutes each side or until they are fully cooked and crispy.  Set aside and chop up into small pieces
4.  Cut hard boiled eggs in half and remove yolks.  Chop egg whites into small chunks
5.  Cut cherry tomatoes in half
6.  Layer spring mix on plates and top with 1/4 of the egg whites, bacon, cucumber, scallion, tomatoes, corn, and jalapeno.  Portion out 1/4 of the dressing on the side

Serves 4 healthy portions!  Enjoy :)
