Chili Pork & Tomato Corn Salsa Burritos

Sunday, April 14, 2013

From our skinny table to yours ...

Chicken breast is typically our go-to lean protein but tonight we're switching things up with the other white meat, pork! Boneless pork chops are high in protein and surprisingly low in fat and a great healthy alternative to those of us stuck in a chicken rut.

Tonight we're making a skinnied down Mexican burrito. Our version starts with boneless pork chops spiced with cumin, cayenne and chili powder. Before grilling, we always trim away any visible fat to keep these chops as healthy as possible. We top these with a fresh tomato and grilled corn salsa. This salsa is delicious served by itself as a fresh & healthy appetizer too! We top these off with creamy avocado slices in place of the typical cheese and sour cream. We stuff it all in a 100 calorie whole wheat wrap and top these off with a squeeze of fresh lime juice to finish them off & brighten up all the flavors.

Hope you enjoy!
