From our skinny table to yours...

Ever get those sneaky cravings after seeing something oh-so tempting on a late night TV commercial?  How annoying right, shouldn't food commercials be banned after 8 pm?  We certainly think so, however we found tonight's dinner inspiration from that very thing.   Tonight we are making Chicken and Broccoli White Calzones! Tonight's recipe re-do will satisfy any calzone craving at a fraction of the calories!  The typical calzone at any restaurant ranges between 1,000 & 1,500 calories!  That's just insane, but fried dough and cheese galore, what would you expect?  That's a days worth of calories in a matter of minutes.  No thank you!


Another perk to our meal, it will come together quicker than any delivery service!  Simply stuff a whole wheat pita with lean chicken breast, broccoli, fresh basil, garlic, and 2 tablespoons of reduced fat mozzarella cheese!  See how simple :)


Pop this tasty dish in the oven for 7 minutes, just to crisp up the pita and melt the cheese to perfection!  We love white pizza, but for some reason always seem to go for a little marinara on the side, it's our weakness!  We simply pureed up a can of fire roasted diced tomatoes for the perfect accompaniment. 


Delicious, healthy and easy now just wait until you hear the best part!  This entire calzone, both halves, comes in at only 347 calories!  Not too shabby huh ;)  Hope you enjoy this healthy twist on the calzone!

Nutrition Facts Per Serving
Serves: 4
Serving size: 1 entire calzone (2 halves)
Calories: 347
Fat: 9.9 grams
Carbs: 38 grams
Dietary fiber: 5.9 grams
Protein: 35.6 grams

Ingredients
1 pound lean chicken breast
2 cups chopped broccoli
6 cloves garlic minced
1/4 sweet yellow onion chopped
8 tbsp reduced fat mozzarella cheese
1 handful chopped basil
1 tbsp olive oil
4 whole wheat pita (ours was 140 calories per pita)

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  Chop lean chicken breast into small bite size pieces and saute in one tbsp olive oil with half of garlic and all of chopped onion.  Saute for approx 5-7 minutes or until chicken is fully cooked and white througout
3.  While chicken is cooking, boil water and cook broccoli by blanching in boiling water for 3 minutes just to soften
4.  Slice pitas in half and stuff each half with 1/8 of the ingredients including the chicken, broccoli, remaining garlic, basil and mozzarella cheese
5.  Place pitas in oven and cook for approx 7 minutes or until cheese is melted and pita begins to crisp

Serves 4 healthy portions!  Enjoy :)

  3. This looks great! I have to make it when my man gets home from deployment because I know he'll like it. I am so lucky that he likes to eat healthy. Actually, he's probably more into eating right and staying active than I am!
