Buffalo Turkey Meatballs

From our skinny table to yours...

It's the weekend and for many that means takeout!  Our weekend ritual growing up was always pizza and buffalo wings.  As much as we still love buffalo wings, we know that they will certainly not keep us looking good in our bikini.  When the craving hits, it hits us hard and this is where we turn!  Tonight we're baking up buffalo turkey meatballs!


The best part about this meal, besides the amazing flavor, is that the entire meal will come together in under 30 minutes!  What's better than healthy fast food?  Not too much if you ask us!  Flavor is one thing these meatballs are not lacking, we mixed in tons of HOT buffalo sauce (which has ZERO calories), reduced fat mozzarella cheese, garlic, onion, panko bread crumbs and lots of fresh cilantro and basil.  These meatballs are baked in the oven until golden brown and then tossed in buffalo sauce. YUM!


We're keeping both the calories and carbs low with this delicious meal.  We plated these meatballs up over a bed of fresh spinach with chopped carrots and celery for that much needed crunch!  We aren't stopping here, for us hot sauce and ranch go hand in hand.  We always portion out 2 tablespoons of our dressing on the side so we don't over pour.  This entire meal, including the light ranch, has only 328 calories!  Who would've thought buffalo meatballs would help with the summer body??

Serves: 4
Serving size: 3 meatballs

Carbs: 22.3 grams

Ingredients
1 pound lean ground turkey (we used 94% lean)
2 tbsp reduced fat mozzarella cheese
1 cup + 2 tbsp buffalo hot sauce (we used Frank's)
1/2 cup whole wheat panko
2 garlic cloves minced 
1/4 small yellow onion minced
1 egg white
1 handful fresh cilantro chopped
1 handful fresh basil chopped 
8 cups fresh spinach
2 large carrots chopped
3 celery sticks chopped 
8 tbsp light ranch - to dress salads

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  Add ground turkey to mixing bowl.  Add garlic, onion, cilantro, basil, mozzarella cheese, egg white, panko and 2 tbsp buffalo sauce.  Mix to combine
3.  Form mixture into small balls.  Should make between 12 and 15 depending on size
4.  Spray pam onto baking sheet and arrange meatballs onto tray
5.  Bake at 400 for 15 minutes, flipping halfway through
6.  Add remaining cup of hot sauce to saute pan on stove at low heat.  Toss all meatballs into pan to coat with hot sauce.  Cook for an additional 2-3 minutes to fully coat all meatballs and heat sauce throughout

Serves 4 healthy portions!  Arrange 3 meatballs over a bed of fresh spinach with chopped carrots and celery.  Serve alongside 2 tablespoons of light ranch dressing!

  2. I made these last night and served them over sauteed kale. I added some dill, garlic and onion powder to plain greek yogurt for the sauce! It was so good!
