Balsamic Glazed Brussels Sprouts with Pictachios & Dried Cherries

From our skinny table to yours...

As our love for brussels sprouts continues to grow we wanted to create something a little different with this delicious green!  We fancied this veggie up with crushed pistachios, dried cranberries and a balsamic glaze.  There is no way the kiddies can say no to this dish!  It was such a delicious combination of flavors and couldn't be healthier :)


This side dish is absolutely gorgeous and would make for an impressive side dish if you're hosting a dinner party.  This would also make for a healthy lunch if it's just you and you're looking to eat light!  The best news this whole dish comes together in under ten minutes flat!  Simply saute your brussels sprouts up in olive oil until golden brown and top with the crushed nuts and berries.  Top with balsamic glaze (we use store bought) and you are good to go!

Our Grilled Chicken Kebabs with Cilantro & Jalapeno Pesto would make for a wonderful dinner pairing at only 388 calories for the two!

Serves: 4
Calories: 111
Fat: 5.6 grams
Carbs: 11.3 grams
Dietary Fiber: 4.7 grams
Protein: 4.7 grams

Ingredients
1 pound brussels sprouts
1 tbsp olive oil
2 tbsp crushed pistachios
1 tbsp dried cherries
1 tbsp balsamic glaze (we used Bertolli)

Let's get cooking!
1.  Cut off end of brussels sprouts and pull off any loose leaves.  Slice brussels sprouts in half lengthwise  
2.  Add one tbsp olive oil to pan and saute sprouts for approx 5-7 minutes or until golden brown
3.  Place cooked sprouts in serving dish and top with crushed pistachios and dried cherries.  Top with balsamic glaze

Portion out 4 ways and enjoy :)
