From our skinny table to yours...

Breakfast... the most important meal of the day!  Let's be honest here, when it comes to breakfast in the morning there are times when we hit the snooze button one too many times leaving no time to make a healthy morning meal.  Then you grab something pre-packaged, high in calories and not too nutritious.  That's not a good way to start the day!  One of our favorite skinny tricks is to plan out our breakfast for the week and pre-make a weeks worth every Sunday!  So join us today and let's pre-make our breakfast meals this week to start each day off with a bang ;)

Today we are preparing veggie egg white morning muffins.  These could not be any easier to make.  Easy and nutritious, talk about a winning combination!  We packed these muffins with sauteed red and green peppers, onion, asparagus and spinach.  Use this combination of flavors or whatever veggies you have on hand!  What's healthier than starting your day off with veggies?


Now to add our protein.  We used only egg whites which have no fat, are low in calories and high in protein! We mixed everything together and poured them into our muffin tins which are absolutely perfect for portion control!  We topped each muffin off with a drop of hot sauce, because we are obsessed with spicy foods and love the fact that hot sauce has ZERO calories!  Skip that part or make half with/half without, your call :)


Pop these in the oven and presto, a healthy grab 'n go meal!  Want to hear the best part?  Each muffin has only 37 calories!  Yep, that's it so guess what... you can have more than one!   


MMM... don't those look tasty!  These are super easy and make for a stress free morning.  Now lunge your way over to the kitchen and get prepping for the week so you can go ahead and use that snooze alarm on Monday!

Nutrition Facts Per Serving
Serves: 6
Serving size: 2 muffins
Calories: 74
Fat: 2.7 grams
Carbs: 5.3 grams
Dietary fiber: 1.7 grams
Protein: 8.3 grams

Veggie Egg White Morning Muffins
Ingredients
One tbsp olive oil
1.5 cups egg white
2 cups raw spinach
2 peppers (we used one red & one green)
1 yellow onion
1 cup raw asparagus
1 tbsp reduced fat mozzarella cheese
Pepper 
Hot sauce to taste if desired

Let's get cooking!
1.  Preheat oven to 350 degrees
2.  Chop all veggies into small chunks.  Add one tbsp olive oil to saute pan and add peppers and onion.  Saute for approx 5-7 minutes or until veggies begin to soften and lightly turn brown
3.  Add asparagus and spinach to the pan and saute for an additional 2-3 minutes.  Add one tbsp mozzarella cheese and mix around to melt
4.  Pour egg whites into bowl and mix in the veggies
5.  Fill each muffin tin with the egg and veggie mixture.  Be sure to leave a little room at the time as they rise
6.  Bake for 20-25 minutes or until fully cooked.  To check if fully cooked stick a knife down the center of each muffin and it should come out clean

Serves 6 healthy portions!  Enjoy :)

    1. You can but the moisture that you cooked in separates from the egg and so the texture is very odd. It's as if you have scrambled eggs and then you throw a bit of water on top

    Bethany you certainly can! We recommend taking them out of the freezer to defrost in the fridge the night before. Just pop in the microwave for 30 seconds and enjoy :)

  8. question...I have just started making /trying healthy clean foods and I really like these, however...when I warm up in the microwave I have to put about 4 paper towels underneath then to soak up liquid. Is that normal?
