Tilapia Fajita Lettuce Wraps with Strawberry Salsa

From our skinny table to yours...


So we officially put our winter coats away... a little premature?  With the warmer months approaching we have been taking full advantage and are so excited to start making more springy meals!  If you haven't been following along, NOW is the time, as bikini season is right around the corner.  Do you want to flaunt your bikini or hide behind a one piece?  I think you know the answer to that one ;)

Today we are whipping up a healthy and delicious strawberry and kiwi salsa, which screams SPRING season to us!  This salsa is super easy to make and would also make for a wonderful appetizer to serve up at your next BBQ.  Tonight we are using this as the topper to our tilapia fajitas!  Simply chop up fresh strawberries, kiwi, jalapeno, yellow pepper, red onion, fresh cilantro and squeeze in the juice from a lime and presto, fruit salsa!


We used tilapia as the protein in this dish.  We baked our fish with garlic, lime slices, fresh cilantro and just a touch of brown sugar.  By a touch we mean two teaspoons, which only has 30 calories, yet still gives the fish a nice sugary bite!  Baking the fish saves so many calories and cooks up to a nice and flaky finish.


We thought caramelized red onions and poblano peppers would compliment both the fish and salsa perfectly.  The subtle spice and sugary bite from the onions was the perfect balance of sweet and spicy!


We wrapped these up in, you guessed it, a lettuce wrap!  These are definitely are go-to's when it comes to wraps.  It just seems silly to us to use an actual wrap and tack on a hundred calories for one wrap when you can have TWO lettuce wraps for no calories at all!  We are firm believers of everything in moderation so if you haven't had any carbs yet today and are craving the actual thing for dinner, well then eat up!  Just watch your calories, as weight is really just a numbers game!

Tilapia Fajita Lettuce Wraps with Strawberry Salsa
Ingredients
1 tbsp olive oil
1 pound tilapia filet
1/2 pint fresh strawberries
2 kiwi
1 red onion
1 yellow pepper (red or green would work too)
2 poblano peppers
1 jalapeno
4 cloves garlic minced
2 limes
2 teaspoons brown sugar
1 large handful freshly chopped cilantro 
Black Pepper to taste

Let's get cooking!
1.  Preheat oven to 375 degrees.  Spray baking sheet with non-stick spray.  Lay tilapia filets on baking sheet.  Sprinkle filets with black pepper and half of minced garlic.  Sprinkle on 1/4 of freshly chopped cilantro.  Slice lime into thin slices and lay two limes out on each individual piece.  Bake for 30 minutes or until fish easily flakes with fork.
2.  Meanwhile begin salsa.  Chop strawberries and kiwi and yellow pepper into small chunks and add to serving bowl.  Mince jalapeno and 1/4 of red onion and add to bowl.  Add remaining chopped cilantro and add the juice of one lime to bowl.  Set aside
3.  In saute pan add one tbsp olive oil.  Slice the remaining red onion into thin slices.  Slice both poblano peppers into thin slices.  Add onions and peppers to pan with remaining garlic.  Saute for approx ten minutes or until caramelized and golden brown
4.  Line lettuce leaf with tilapia, then peppers and onion, and top with strawberry salsa.

Serves 4 healthy portions!  Enjoy :)
