Mexican Stuffed Sweet Potatoes

From our skinny table to yours...

Some of our favorite flavors... cilantro, lime, avocado, cumin... if you haven't noticed ;)  Tonight we are indulging in Mexican stuffed sweet potatoes!   This healthy dinner will pack many of our favorite things into a sweet and savory sweet potato!  How does pulled chicken, black beans, cumin, roasted red peppers, caramelized onions, sweet corn, jalapeno and garlic sound stuffed in a sweet potato?  Pretty delicious if you ask us! Join us tonight for a wonderfully healthy and hearty Sunday night meal :)

This one is super easy as well and doesn't require much clean up!  We love to cook, but who loves to clean?  Not us.... that's for sure!  We start dinner off by roasting our sweet potatoes in the oven.  Next we simply boil up our chicken, which is a little trick of ours to keep the calorie count at an all time low!  In a saute pan caramelize up an onion with both jalapeno and garlic.  Once the onions are sugary and brown toss your shredded chicken into the pan and flavor it up with lime juice, cumin, and cilantro.  Next, toss in a can of reduced sodium black beans, sweet baby corn and roasted red peppers!  You can roast your own or take a little help from the store tonight (as we did) and simply buy a jar at your local grocer.  Simply take your sweet potatoes out of the oven, cut them in half and stuff, stuff, stuff away!



Can you have Mexican food without cheese?  Not us, we topped each potato with one tablespoon of reduced fat Mexican cheese!  One tablespoon of this cheese has only 20 calories!  It doesn't get any better than that :)  Toss these potatoes in the oven just to melt the cheese and you have yourself and healthy and nutritious Sunday night meal!  We topped our potatoes with mango, avocado and cilantro for extra fresh and juicy flavors.

Mexican Stuffed Sweet Potatoes
Ingredients
Olive oil
2 sweet potatoes
1/2 pound chicken
1 can reduced sodium black beans (rinsed to remove excess sodium)
1/4 cup reduced fat mexican cheese 
4 garlic cloves minced
1 jalapeno minced (omit if you don't like spice)
1 roasted red pepper
1 onion
1/3 cup frozen corn
1 tbsp cumin
1 lime
1 handful cilantro
Garnish - we used 1 mango and extra fresh cilantro

Let's get cooking!
1.  Preheat oven to 400 degrees.  Puncture the sweet potatoes with a fork and cover with a light coating of olive oil.  Bake for approx 45 minutes or until potatoes are soft.
2.  Meanwhile boil up chicken breast for ten minutes or until fully cooked - chicken should be white throughout
3.  Once chicken is fully cooked, remove from water and shred using two forks
4.  Thinly slice onion and add to pan with one tbsp olive oil.  Saute for approx 5 minutes and then add in minced garlic and jalapeno.  Toss shredded chicken into pan.  Add the juice from one lime, cumin and most of the chopped fresh cilantro (save a small amount for garnish)
5.  Add can black beans, frozen corn and roasted red peppers and cook for 5 minutes to combine flavors
6.  Remove potatoes from oven and slice in half.  Mash the potato and push down with fork to make a pocket for the filling
7.  Spray baking sheet with non-stick spray and add potato halves to dish
7.  Add 1/4 filling into each potato slice and top each potato with one tbsp Mexican cheese
8.  Bake for an additional ten minutes or until cheese begins to melt

Serves 4 healthy portions  :)  Serve alongside a veggie of your choice!
