Guacamole Chopped Salad with Cilantro Lime Vinaigrette

From our skinny table to yours ...

Mmmm guacamole ... easily one of our favorite appetizers! And the guacamole itself, although a bit high in fat, is actually pretty good for you. The guilt comes from what is served along side it, fried tortilla chips. Not to mention, guacamole is typically just an appetizer. You may still have upwards of 1000 calories coming as your dinner! No thank you! So to satisfy our guacamole craving but still keep our waistline happy, we are turning this guilty pleasure appetizer into a guilt free simple salad.

What's even better? This whole meal takes about 20 minutes from start to finish! We start by grilling up thinly sliced chicken breast. Then simply slice up your avocados, tomatoes, jalapeño and red onion. Blend up the juice of two limes, garlic, vinegar, olive oil and tons of fresh cilantro. Layer it all together and you have the perfect light supper for any busy weeknight.

Serves 4

Carbs: 18.4 grams
Dietary Fiber: 9.5 grams
Protein: 40.1 grams

Ingredients
1 pound thinly sliced chicken breast
2 avocados sliced
4 tomatoes sliced
1/4 red onion thinly sliced
1 jalapeño pepper
1 handful cilantro plus extra for garnish
2 limes
1 tbsp rice wine vinegar
1/4 cup extra virgin olive oil - split into 3 tbsp & 1 tbsp
2 garlic cloves minced
Salt & Pepper

Let's Get Cooking!
1. Heat grill pan over medium high heat and add one tablespoon on olive oil to pan. Season chicken with salt & pepper and grill 5-6 minutes on each side until cooked through.
2. To make dressing add juice of 2 limes, vinegar, 3 tbsp olive oil, garlic and cilantro to blender and pulse until smooth.
3. Slice avocado, tomato, jalapeño and red onion.
4. Plate one sliced tomato, half of an avocado, 1/4 of your jalapeño and red onion on each plate. Top with 1/4 of your chicken and drizzle with dressing. Garnish with a bit more fresh cilantro & enjoy :)

Makes 4 healthy portions!
