Ground Turkey Sweet Potato Shepherd's Pie

From our skinny table to yours...

It's Saint Patty's Day weekend and you know what that means.... Shepherd's Pie!  You might be thinking there is no way we could turn this typically fattening dish into a healthy delicious meal for just over 300 calories!  Well we did it and it was well received by all :)  'If people try out this dish, there are going to be a lot of happy husbands out there ' - a direct quote from the hubs happily eating ;)  So take his advice and make this one for your whole family!

We start out by swapping the traditional white potatoes with sweet potatoes for higher nutritional value and more flavor!  We feel when using sweet potatoes less butter and milk is needed because of the already sweet and tangy flavor.  We mashed our potatoes with a meer tablespoon of butter and a quarter cup of non-fat milk!  Not too shabby huh ;)  To make our ground meat mixture we thought we would hide in veggies galore.  This is a great little tip if you are feeding picky eaters, cut the veggies small enough and the kids won't even know they're in there!  We choose to use carrots, leeks, zucchini, mushroom and frozen corn and peas!  Use a mixture of whatever you have on hand, any combination will do.  Simply saute up and then add in your 93% lean ground turkey, 2 cups of sodium free chicken stock and just a hint of whole wheat flour to thicken up! It's as simple as that and doesn't it just sound healthy?





Pop this dish in the oven until the potatoes begin to crisp and turn a light golden brown.  This dish serves 8, so whether you're serving this dish up at a St. Patty's day party or cooking for two and freezing the leftovers, it's sure to get eaten!  That is one of our favorite skinny tips as we only cook for two!  Having healthy go-to meals in the freezer is great for those busy nights when you don't have time to cook and tend to reach for the take-out menus!  Skip the calories, fat and sodium from restaurants and grab your handy freezer meal :)

Nutrition Facts Per Serving
Serves: 8 portions
Calories: 309
Fat: 7.8 grams
Carbs: 46.2 grams
Dietary fiber: 7.5 grams
Protein: 15.7 grams

Ingredients
1 pound 93% lean turkey breast
1 tbsp olive oil
1 zucchini
2 mushrooms
2 carrots
3 leeks
6 garlic cloves
1 jalapeno
1 frozen corn
1 frozen peas
2 cups chicken stock
4 sweet potatoes - approx 6 cups cubed
1 tbsp whole wheat flour
1 tbsp butter
1 handful fresh parsley

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  Peel and cub sweet potatoes into small chunks.  Place sweet potato cubes in pot and cover with water.  Boil for approx 25 minutes or until softened
3.  Mash when softened (with hand mixer or by hand) with one tbsp butter and 1/4 cup skim milk. 
4.  To make meat mixture simply add one tbsp olive oil into pan with chopped carrots and leeks and jalapeno.  Saute for 5-7 minutes.  Add chopped mushrooms, chopped zucchini and minced garlic.  Saute for another 5 minutes to brown the veggies  
5.  Add ground turkey and cook until browned.  Add 2 cups sodium free chicken stock and add frozen peas and corn to the mixture.  Add chopped parsley and one tbsp whole wheat flour and cook for approx ten minutes until mixture begins to thicken.
6.  Spray baking sheet with non-stick spray and add meat mixture.  Top with sweet potatoes and place in oven for 30 minutes or until potatoes begin to lightly turn brown

Serves 8 healthy portions!  Enjoy ;)

  4. This was really good! We didn't have any fresh veggies (besides onion and garlic) so I used a bag of frozen italian style veggies. I think any veggies you have on hand would work well. it was super tasty. I added crushed red pepper to my bowl :)
