Zesty Orange Sweet Potato Mash

From our skinny table to yours...

We love sweet potatoes any way... roasted, grilled, 'french-fried', sauteed... you name it and we'll eat it!  Tonight we're making Sweet Potato Mash!  Mashed potatoes can be a little tricky sometimes when you're trying to stay in shape, as they are usually filled with butter, cream and salt galore.  We love the sweetness in nutritious sweet potatoes and honestly prefer them to white now.  We thought what better way to compliment the natural sweetness from the potatoes than with freshly squeezed orange juice.  Yep, that was the solution to our skinny needs... skip the cream and squeeze in a juicy orange!



These are super simple to make as well!  Simply boil your sweet potatoes until they are nice and tender and get to mashin'.  We hand mashed the potatoes with freshly squeezed orange juice, orange zest, one tablespoon of butter, and one tablespoon of freshly grated nutty parmesan cheese.  These were so delicious and would pair well with many of our dinner dishes such as our crabs cakes or our pistachio & cranberry pesto stuffed chicken.

Zesty Orange Sweet Potato Mash
Ingredients
3 sweet potatoes
2 oranges and zest
1 tbsp butter
1 tbsp parmesan cheese

Let's get cooking!
1.  Peel sweet potatoes and chop into small chunks.  Boil potatoes for approx 20 minutes or until nice and tender.  
2.  Drain potatoes and place back into warm pot
3.  Zest one orange and mix into the potatoes.  Squeeze the juice from both oranges into pot and add butter and cheese
4.  Hand mash potatoes until you reach a nice and creamy consistency or use a hand blender if you prefer

Serves 4 healthy portions!  Enjoy :)
