From our skinny table to yours...

Who doesn't love pizza?  I think we can all agree pizza is one of the best things out there :) We can also say the same about Mexican food. It's certainly one of our favorites!  So we thought why not combine the two and boy was this a treat for our taste buds!  Now let's talk skinny substitutions... for starters we used a whole wheat tortilla instead of traditional pizza dough, saving both calories and carbs. Secondly instead of pizza sauce we used salsa, which depending on the brand you buy is practically calorie free!



We used a little help from the store here and bought a jar of black bean and corn salsa. There are so many options out there, so you can grab whatever sounds appealing to you at the time!  The next step in our Mexican pizza is to pile on our lean ground turkey and black bean combo.  We simply cooked up our 93% lean turkey meat with garlic, lime juice, black beans, cumin and lots of fresh cilantro.. YUM!  



We then topped this healthy pizza pie with caramelized onions and chili peppers. The chili peppers gave the pizza a nice subtle kick, if you don't want that hint of spice go for a red pepper, which would be equally as delicious! What's the final topping to any pizza?  It's the cheese of course!  In this case we used reduced fat Mexican cheese.  We found two tablespoons per pie is the perfect amount to satisfy that cheesy craving, yet not compromise our waistlines!


This was a great combinations of flavors and took care of two of our favorite cravings, Mexican food and pizza!  This is a great way to practice portion control as well, as everyone gets their own individual personal pie!  So play a little trick on your mind along with us and indulge in this pizza pie, all to yourself, with us tonight!  Hope you enjoy this one as much as we did!

Turkey, Black Bean & Chili Pepper Mexican Pizza
Ingredients
Olive oil
4 whole wheat tortillas
1 pound lean ground turkey (we used 93% lean)
1 can reduced sodium black beans (rinsed to remove excess sodium)
1 large chili pepper
1 large yellow onion
4 garlic cloves
1/2 cup reduced fat mexican cheese
3/4 cup salsa (we used black bean and corn)
1 lime
1 handful fresh cilantro

Let's get cooking!
1.  Preheat oven to 400 degrees
2.  Toast tortillas in the oven for 4 minutes in preheated oven, 2 minutes per side - or until lightly browned
3.  Mince garlic and saute in pan over one tbsp olive oil.  Add lean ground turkey, and can of rinsed black beans.  Squeeze in the juice from lime and add chopped cilantro.  Cook approx ten minutes or until meat is fully browned
4.  Meanwhile slice pepper and onion into thin strips and saute in pan over one tbsp olive oil for approx 15 minutes or until browned and carmelized
5.  To assemble pizza - add 3 tbsp of salsa on each tortilla, followed by 2 tbsp of meat mixture, 1/4 of pepper and onion mixture, and top with 2 tbsp mexican cheese
6.  Cook all pizzas in oven for an additional ten minutes or until cheese is fully melted.  Garnish with fresh cilantro

Serves 4 healthy portions!  Enjoy :)
