Looking for a healthy game day snack? Well you came to the right place!  We are making a super healthy and super delicious Roasted Garlic Spinach & Artichoke Dip today.  While you may think all spinach and artichoke dips must be healthy because it's a veggie dip, that is simply not the case.  We were shocked when we did our research.  Most restaurants serve this appetizer up for 1,000 calories PER SERVING.  That is unheard of so we went to work in the kitchen to make something equally as delicious, yet not compromise our waistlines!

For starters the 'cream' sauce in this dish comes simply comes from 1 cup skim milk, to 1/4 cup both parmesan and reduced fat mozzarella cheese! Add the calories up there and we are looking at only about 250 calories!  Now this is the whole dish, compared to the restaurants per serving version.  Don't worry taste is not compromised here and there is certainly no need to feel guilty about this game day snack!

This is a quick and easy treat to make too.  We simply saute up a little white onion with fresh spinach and the artichokes.  Then we mix in our 'cheesy' sauce and top it off with the roasted garlic.  The roasted garlic adds a nice subtle garlic flavor, but if you're short on time simply mince up a few cloves to knock off about 25 minutes :)  Pop this dish in the oven, lunge your way over to the couch and get ready for the perfect game day snack!






Roasted Garlic Spinach & Artichoke Dip
Ingredients
Olive oil
1/4 minced white onion
3 bags spinach
1 head garlic
1 cup skim milk
1/4 cup parmesan cheese plus 2 tbsp for topping
1/4 cup reduced fat mozzarella cheese
3 jar artichoke (6 oz)
Salt & Pepper

Let's get cooking!
1.  Preheat oven to 400 degrees.  Cut off 1/4 inch off the top of the garlic head (the pointy part) to expose some of the garlic.  Cover with olive oil and wrap the whole head in tin foil.  Cook for approx 25 minutes.  Garlic should be light brown in color and the whole head should be soft.  Mince and set aside
2.  To make 'cream' sauce add 1 cup skim milk to pan.  Add the parm and mozz cheese both in slowly and whisk continuously the whole time until you reach a nice and creamy consistency.  Season cream with salt and pepper
3.  Add one tbsp olive oil to pan and toss in the minced onion.  Saute until soft.  Add spinach one bag at a time as spinach will wilt down.  Once you have all spinach wilted, place in strainer to allow excess water to drain off.  Place spinach and onion mixture back into pan  
4.  Remove the heads off each individual artichoke so the leaves separate.  Add all artichokes to the pan with the spinach. 
5.  Mix roasted garlic into spinach mixture 
6.  Add the cream sauce slowly into the spinach pan and mix around.
7.  Spray baking dish with non-stick spray and add the spinach mixture into the dish.  Top the dish with the remaining 2 tbsp parmesan cheese and bake for 20 minutes, or until the top is golden brown
