Mixed Greens with White Balsamic Vinaigrette

From our skinny table to yours ...

Today's lunch is a super easy and super delicious green salad with our homemade white balsamic vinaigrette. We love to have a salad everyday! Not only is it delicious but it's a great way to pack in the veggies, fiber & nutrients.

We truly believe everything in moderation so if we are having carbs for dinner, we try to eat a lighter lunch. Today's veggie packed salad is full of flavor & texture with roasted red peppers, creamy avocado and carrots for crunch instead of heavy, calorie packed croutons!

We always make our own dressing too so we know exactly what's in it. Today we are topping our salad with our homemade white balsamic vinaigrette. This dressing is so good and such a delicious change up from the typical balsamic vinaigrette. Not too mention, it's so easy to make! Our recipe will make extra too because we like to keep it on hand to dip veggies throughout the week. Trust us, you'll want to too ... It's THAT good!

Salad Ingredients
1 bag of mixed greens
1 avocado
1/4 red onion sliced
1/4 cup sliced carrots
1 roasted red pepper
Half of a cucumber

White Balsamic Vinaigrette
1/4 cup white balsamic vinegar
1/4 cup extra virgin olive oil
1 tsp honey Dijon mustard
1/2 tsp brown sugar
1 garlic clove minced
Salt & Pepper

Let's get cooking!
1. To make dressing, add vinegar, olive oil, Dijon mustard, brown sugar, garlic, salt & pepper to the blender and mix to combine. (You can always just whisk it but the blender makes it a bit thicker!)
2. Chop avocado, carrots, roasted red pepper & cucumber and slice red onion.
3. Place a bed of mixed greens on each plate and top with your veggies & white balsamic vinaigrette.

Makes 2 healthy portions!
