Quinoa Turkey Guacamole Lettuce Wraps

We love lettuce wraps! It gives the perfect cool crunch, skips all the unneeded calories and honestly, it's just more fun to skip the silverware sometimes :)

Here's a super fake out meal for you! It's so good we promise you would never think of it as health food ... And so good, we threw portion control out the window for the night but no need to feel guilty here!

One of our favorite ways to cut down our meat portion (but still keeps the hubs happy) is to mix equal parts lean ground turkey & quinoa and throw in some black beans for a bonus protein punch. We sautéed up our 'meat' with garlic, onions, zucchini, corn, lime juice and tons of fresh cilantro ... Yum! Caramelized sweet potatoes, peppers & onions makes the perfect topping to our lettuce wraps, but wait there's more ... Our famous creamy guacamole! Wrap it all together into a crisp lettuce leaf to eliminate the carbs & add a fresh juicy crunch!

Ingredients
Olive oil
Garlic (5-6 cloves)
1/2 pound ground turkey
1 cup dry quinoa
1 can low sodium black beans
1 cup corn
1 small zucchini
1 sweet potato
2 red peppers
2 yellow onions
2 avocados
1 lime
1 handful cherry tomatoes
1 bunch cilantro
1 head Boston lettuce
Mexican spices (cumin, cayenne, chili powder)

Let's get cooking!
1. Cook quinoa according to package directions. Chop up onion finely (1/4 will be used for guacamole) 3 cloves garlic, and zucchini and sauté in pan with olive oil until softened. Add in ground turkey, and cook until browned
2. Add cooked quinoa, can of black beans (thoroughly rinsed to reduce sodium content), corn, lime juice, Mexican spices to taste (we used 1 tbs chili, 1 tbs cumin and a pinch of cayenne) into pan with meat and cook to combine flavors
3. Slice up 2 peppers and remaining onion and sauté up with remaining minced garlic until golden brown. Chop up sweet potato into small chunks and season with cumin, sauté in olive oil until golden brown.
4. To make guacamole, scoop out both avocados and give a quick mash. Add pinch of salt, 1/4 of finely chopped onion, diced cherry tomatoes, handful of cilantro finely chopped and a squeeze of lime juice.
5. Pile in the 'meat mixture', topped with sweet potatoes, peppers and onions mixture and lastly guacamole into leaf leaf
6. Wrap and enjoy!!
