Black Bean, Sweet Potato & Quinoa Veggie Burgers

From our skinny table to yours...
It's quick and easy to go out and buy a box of frozen veggie burgers.  It's also easy to think that by doing so we're being healthy!  We like to know exactly what we're putting in our bodies, and that's why we like to make everything fresh so we know we're being healthy and good to our bodies!  You have to eat good to look good and these veggie burgers are a great way to keep in shape and enjoy doing so :) 

As we have said we like to go vegetarian every now and again because of the health benefits.  When we do so, quinoa is one of our favorite go-to's because of it's high protien content.  Well, we're making 'burgers' so we thought we would through in black beans too, for an extra protien punch!  The hubs love their protien and we have to keep them happy too! 

This is a super simple recipe as we, yet again, let our food processors do the work for us :)  Simply toss in black beans, roasted sweet potatoes, roasted corn, garlic, red onion, red pepper, lime juice, and fresh cilantro, then blend away!  Mix in cooked quinoa and just a dab of whole wheat panko, form into patties and pan saute until browned!  See how simple... and you will soon see how delicious ;)  We topped these burgers with yesterday's 'Black Bean, Roasted Corn, & Avocado Salsa' since we had some left in the fridge!  If you finished yours a crunchy slice of fresh tomato and avocado would pair nicely too!  Hope you like these as much as we do!


Black Bean, Sweet Potato & Quinoa Veggie Burgers
Ingredients
1 can black beans
1/2 sweet potato
1/4 cup dry quinoa
1/2 avocado
1/2 cup frozen corn
2 garlic cloves
1/4 red onion
1/2 red pepper
1 tsp cumin
1 tsp chili powder
1 handful fresh cilantro
1 lime
1/4 cup whole wheat panko bread crumbs

Let's get cooking!
1. Cook quinoa according to package.  Once fully cooked, squeeze in the juice of 1/2 fresh lime and mash in 1/2 avocado.  Set aside for later
2. Get food processor ready, as most of the ingredients will be blended up together.  Cook black beans according to directions, then place in processor.  Chop up sweet potato and red pepper into small chunks and saute in olive oil along with the frozen corn until browned.  Place cooked ingredients in processor with beans
3.  Add cumin, chili powder, cilantro, remaining lime juice, garlic and red onion into processor and blend with ingredients.  Blend until smooth consistency
4.  Add panko to thicken and form mixture into patties.  Makes approx 8 'burgers'
5.  Saute in pan with olive oil into golden brown, serve on whole wheat bun, garnish with toppings of choice
