Black Bean, Roasted Corn & Avocado Salsa

From our skinny table to yours...
We all deserve (and need) a snack here and then and this is the perfect go-to!  This salsa is packed with fresh delicious flavors and there is no need to feel guilty about this one.  MMM... black beans, avocado and roasted corn salsa!  This super easy salsa is perfect as an afternoon snack, an addition to taco night, and even makes for a great appetizer to bring along to a dinner party ;)  Simply mix together black beans, avocado, roasted corn, garlic, red onion, jalapeno, cilantro, lime juice and cherry tomatoes! 

This salsa is so low in cal's, it's not how much you eat, but what you dip in it that matters!  So we suggest slicing up fresh veggies along with whole grain tortilla chips, so you don't over indulge on chips and to add in an extra boost of nutrition!  We love using zucchini and cucumber slices.  Dip and go... or eat by the spoonful (we have)!!  Enjoy :)



Black Bean, Roasted Corn & Avocado Salsa
Ingredients
1 cup frozen corn
2 avocados
1/2 pint cherry tomatoes
1 can low sodium black beans
2 garlic cloves
1/4 red onion
1 jalapeno
1 handful cilantro
1 lime
Pinch of salt

Let's get cooking!
1.  Cook black beans according to directions, be sure to rinse well to eliminate excess sodium.  Roast corn in saute pan until golden brown. Allow both to cool then place together in serving bowl
2.  Quarter cherry tomatoes and add to bowl
3.  Mince garlic, red onion, jalapeno (seeded), and cilantro stir into bowl
4.  Scoop out both avocados and cut into small chunks.  Add avocado to mix and squeeze in the juice of one small lime
5.  Season with a pinch of salt and mix well to combine flavors
